INGREDIENTS
- 1¼ cups granulated sugar
- 2 eggs
- 1½ cups all-purpose flour
- 1½ zucchinis
- An eighth cup vegetable oil
- ½ cup applesauce
- ½ tsp baking soda
- An eighth tsp salt
- An eighth tsp baking powder
- ½ tbsp cinnamon
- 1½ tbsp vanilla extract

- 1 grater
- 1 food processor
- 1 loaf pan
STEPS
Preheat the oven to 350°F for 15 minutes.
Shred the zucchinis with a grater.
Crack the eggs into a food processor. Then add the all-purpose flour, granulated sugar, shredded zucchini, vegetable oil, applesauce, baking soda, baking powder, vanilla extract, cinnamon, and salt. Blitz for 4 minutes to get a batter.
Pour the batter into a loaf pan and place in a hot oven. Bake for 60 minutes. Then turn off the heat and remove from the oven.
