INGREDIENTS
- 1 tsp salt
- 2½ cups bell peppers
- ¼ cup vegetable oil
- ½ tbsp ginger
- 2 tbsp garlic
- 6 cups white rice
- 2 eggs
- 1 cup tomatoes
- 2 tbsp hot sauce
- 2 tbsp soy sauce
- 1 lemon
- 1 scallion

STEPS
Peel ginger and garlic, then mince them.
Heat a saucepan. Add white rice, 7 cups of water and 1 tsp of salt. Cover the saucepan with a lid and cook for 10 minutes. Turn off the heat to get cooked white rice.
Chop bell peppers, scallion, and tomatoes.
Squeeze a lemon with a squeezer.
Heat vegetable oil in a wok. Stir in ginger and garlic with a wooden spoon for 2 minutes until fried.
Transfer fried ginger and garlic to a bowl.
Put bell peppers and tomatoes in the wok. Stir with a spoon for 4 minutes to get a fried vegetable mix.
Transfer the fried vegetables mix to a bowl.
Add cooked white rice to the wok. Crack eggs and stir with a spoon for 2 minutes. Add fried ginger, garlic, and fried vegetable mix to the wok. Stir in hot sauce, soy sauce, and lemon juice for 2 minutes. Finally, top fried rice with scallions.
