INGREDIENTS
- 1 egg
- ¼ cup granulated sugar
- 2 tbsp butter
- ¼ cup all-purpose flour
- An eighth tsp salt
- ¼ tsp almond extract
- ¼ tsp lemon extract
- ½ oz cooking spray
TOOLS
- 1 slotted spoon
- 1 bowl
- 1 oven
- 1 cookie sheet
- 5 fortune strips
- 1 muffin tin
- 1 electric mixer
STEPS
Crack an egg in a slotted spoon.
Put egg whites in a bowl and beat with an electric mixer on low speed for 2 minutes. Add granulated sugar and butter, then mix again. Add all-purpose flour, salt, almond extract, and lemon extract to the bowl. Mix for 4 more minutes to get a batter.
Preheat the oven to 350°F for 12-15 minutes.
Spray a cookie sheet with cooking spray. Pour batter to shape 3-inch rounds and put the cookie sheet in the oven. Bake for 8 minutes to get baked cookies.
Place fortune strips in the middle of each baked cookie and fold it in half.
Close the cookies from the sides to get fortune cookies.
Set fortune cookies aside for 15 minutes to cool.
