INGREDIENTS
- 8 oz meatless burgers patties
- 10 jalapeño peppers
- 4 ounces neufchatel cheese substitute
- 6 tbsp vegan cheese
- ¼ cup scallions
- ½ tsp cumin
- ½ tsp garlic powder
- ⅓ cup cilantro
- 1 oz cooking spray

STEPS
Trim and halve the jalapeno peppers lengthwise, then deseed them.
Shred the neufchatel cheese substitute and vegan cheese with a grater.
Chop the cilantro and scallions.
Coat a skillet with cooking spray and heat. Put the meatless burger patties in the skillet and cook for 3 minutes to get semi-cooked burger patties.
Flip the semi-cooked burger patties with a spatula and cook for 3 minutes.
Crumble the cooked burger patties with a spatula, then remove from the heat.
Transfer the crumbled burger patties to a plate.
Put the shredded neufchatel cheese substitute, shredded vegan cheese, chopped scallions, half of the crumbled burger patties, cumin, and garlic powder in a bowl. Stir with a spoon to get a filling mixture.
Divide the filling mixture into the deseeded jalapeno peppers.
Place the filled jalapeno peppers in a sheet pan and sprinkle the rest of the crumbled burger patties over the top.
Preheat the oven to 350°f for 15 minutes.
Place the sheet pan in a hot oven and bake for 20 minutes. Then turn off the heat and remove the sheet pan from the oven. Sprinkle with the chopped cilantro.
Transfer to a serving plate.
