INGREDIENTS
- 8 oz meatless burgers patties
- 3 tbsp chili paste
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp brown sugar
- 1 tbsp hot water
- 4 cloves garlic
- 2 tsp ginger
- 3 tbsp olive oil
- 12 oz lo mein noodles
- ½ cup vegetable broth
- 1 cup shiitake mushrooms
- 1 cup snow peas
- ⅓ cup carrots
- 1 handful pak choir
- 1 tbsp sesame seeds
- 1 tbsp scallions

STEPS
Peel and slice ginger.
Heat 3 cups of water in a saucepan. Add vegetable broth and cook for 15 minutes over medium heat.
Slice snow peas.
Peel carrots with a peeler.
Slice pak choir, carrots, scallions, and shiitake mushrooms.
Combine chili paste, soy sauce, sesame oil, garlic, ginger, and brown sugar in a bowl with a whisk to get a paste-like sauce.
Heat olive oil in a skillet. Add meatless burger patties and mash them with a wooden spoon. Cook for 5 minutes, then add paste-like sauce. Stir in lo mein noodles, vegetable broth, carrots, pak choi, snow peas, scallions, and shiitake mushroom with a wooden spoon for 2 minutes. Cook the mixture for 9 minutes.
Transfer beyond burger lo mein to a serving bowl. Top with sesame seeds and shiitake mushrooms.
