INGREDIENTS
- half cup canola oil
- three quarters cup granulated sugar
- 2 eggs
- 1.5 cup bananas
- three quarters cup matzo
- half cup potato starch
- 1 tsp cream of tartar
- 1 tsp baking soda
- half tsp cinnamon
- 0.4 oz cooking spray

STEPS
Peel bananas.
Mash bananas with a fork.
Using an electric mixer, combine canola oil and granulated sugar in a bowl. Then, crack eggs in the bowl and mix. Add mashed bananas, matzo meal, potato starch, cream of tartar, baking soda, and cinnamon to the bowl. Mix everything with a spatula to get a muffin batter.
Preheat the oven to 350°F for 12-15 minutes.
Spray a muffin pan with cooking spray. Pour the muffin mixture into the muffin pan 2/3 full. Put the muffin pan in the oven and bake for 25 minutes.
