INGREDIENTS
- 2 eggs
- 2 cups brown sugar
- 1 cup raisins
- 3 cups all-purpose flour
- 1 cup shortening
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1½ cup powdered sugar
- 2 tsp butter
- ½ tsp vanilla extract
- 1 tsp corn syrup

- 2 bowls

STEPS
Grease a baking dish with 1 tsp of butter.
Heat 1.25 cups of water in a kettle for 1 minute to get hot water.
Combine brown sugar and raisins in a bowl. Stir in all-purpose flour, shortening, ground cinnamon, baking powder, and baking soda with a whisk. Crack eggs in the bowl. Then, add 1 cup of hot water and whisk to get a batter.
Transfer the batter to a baking dish.
Preheat the oven to 350°F for 12-15 minutes.
Put the baking dish in the oven and bake for 20 minutes.
Turn off the heat and take out the baking dish from the oven.
Combine 1.5 tbsp of hot water, butter, vanilla extract, and corn syrup in a bowl with a wooden spoon. Add powdered sugar and beat with an electric mixer to get an icing glaze.
Transfer the cake to a platter.
Drizzle icing glaze over the cake.
