INGREDIENTS
- 2 tbsp butter
- 2 cloves garlic
- 2 cups lentils
- 4 cups vegetable broth
- 1 tbsp ginger root
- 1 lemon
- ½ tsp salt
- ¼ tsp black pepper
- 1 bundle cilantro

STEPS
Peel and chop garlic.
Grate ginger root with a grater.
Zest half a lemon with a zester.
Squeeze the zested lemon.
Chop cilantro and slice the other half of the lemon into wedges.
Heat butter in a saucepan and stir in garlic with a spoon. Add lentils and vegetable broth, then cover with a lid. Let it simmer for 30 minutes, then remove the lid. Mix in ginger, lemon zest, lemon juice, salt, and black pepper to get cooked lentils.
Transfer cooked lentils to a serving plate, then top it with chopped cilantro and lemon wedges.
