INGREDIENTS
- 3 lbs lemons
- 0.6 cup kosher salt
- a quarter cup olive oil

STEPS
Put 8 cups of water in a pan and boil for 2 minutes. Add lemons to the pan, cook for 5 minutes, and then turn off the heat.
Cut lemons into wedges.
Put lemon wedges in a jar with kosher salt and boiled water. Cover with a lid and shake. Set aside for 120 minutes. Remove the lid and add olive oil. Cover again with a lid and shake, then chill in the fridge.
