INGREDIENTS
- 16 oz meatless burgers patties
- 1 yellow onion
- 1 carrot
- 1 rib celery sticks
- 3 cloves garlic
- ½ cup red wine
- ¼ cup tomato paste
- ½ cup vegetable broth
- ¼ bunch parsley
- ¼ bunch thyme leaves
- 1 tbsp oregano
- 1 tbsp basil
- 28 oz can of san marzano tomatoes
- 9 sheets lasagna sheets pasta
- 1 lb mozzarella cheese
- 1 cup ricotta cheese
- ½ cup Parmesan cheese
- 1 pinch salt
- 1 pinch black pepper

STEPS
Peel and dice the yellow onions.
Peel the carrots.
Cut the carrots into halves, then dices. Peel the garlic and mince it. Chop the celery sticks and parsley.
Cut the thyme leaves using scissors.
Chop basil, then slice oregano.
Shred the mozzarella cheese and the parmesan cheese with a grater.
Heat a pot on the stove. Add diced onions and cook for 5 minutes. Add diced carrots, celery sticks, garlic, vegetable broth and a can of san marzano tomatoes to the pot. Cook for 5 more minutes then add meatless burger patties. Crumble the patties using a wooden spoon.
Cook for 5 minutes and stir occasionally with a wooden spoon in the pot. Add red wine to the pot and cook for 3 minutes. Add tomato paste, stir with a wooden spoon, and cook for 5 more minutes. Add thyme leaves, chopped basil, minced oregano and simmer for 12 minutes. Season with salt and black pepper then stir in the pot before stopping heat.
Put water and lasagna sheets pasta in a saucepan. Boil for 3 minutes.
Drain the cooked lasagna sheets in a colander.
Add parchment paper to a baking pan, then transfer 3 sheets of the drained lasagna pasta. Add cooked meatless mixture and ricotta cheese. Top with 3 more sheets of pasta, then the rest of the burger mixture. Sprinkle shredded mozzarella cheese and grated parmesan cheese on top.
Preheat oven to 350F.
Put the baking pan in the hot oven for 15 minutes..
